Stacey Weckstein is a Certified Holistic Health Counselor through the American Association of Drugless Practitioners and a certified raw living foods chef. Her education began at Boston University, where she graduated in 1995 with a B.S. in Psychology. Continuing on to Johnson and Wales University, Stacey graduated in 1996 with an A.S. in Culinary Arts. After ten years in food service management, Stacey was overweight and sick. By adding proper nutrition, an exercise regimen and lifestyle changes she transformed her health and lost 90 pounds. This experience sparked a passion for health and vitality. She went on to attend the Institute for Integrative Nutrition in New York City for holistic health counseling in 2007. Her training and personal success fuels her passion to help others achieve a healthier way of living.
Stacey is a native of New York City. She currently resides in Weston, Florida with her husband and two young daughters. She founded Radiant Mind and Body, an entity that provides lectures, cooking classes, and workshops about wellness and nutrition to individuals, organizations and businesses. A newsletter published by the company, lists articles and recipes written by Stacey and contains a wealth of information tailored to the current topics in health news and media. Monthly, Radiant holds events ranging from raw cooking classes to educational lectures on health issues. A recent event accommodated approximately 125 guests to enjoy a raw food meal and a health related movie. Here guests could enjoy a home-cooked meal and get a chance to discuss concerns or questions with others to improve their lives.
