Stacey Weckstein is a Certified Holistic Health Counselor through the American Association of Drugless Practitioners and a certified raw living foods chef. Her education began at Boston University, where she graduated in 1995 with a B.S. in Psychology. Continuing on to Johnson and Wales University, Stacey graduated in 1996 with an A.S. in Culinary Arts. After ten years in food service management, Stacey was overweight and sick. By adding proper nutrition, an exercise regimen and lifestyle changes she transformed her health and lost 90 pounds. This experience sparked a passion for health and vitality. She went on to attend the Institute for Integrative Nutrition in New York City for holistic health counseling in 2007. Her training and personal success fuels her passion to help others achieve a healthier way of living.
Stacey is a native of New York City. She currently resides in Weston, Florida with her husband and two young daughters. She founded Radiant Mind and Body, an entity that provides lectures, cooking classes, and workshops about wellness and nutrition to individuals, organizations and businesses. A newsletter published by the company, lists articles and recipes written by Stacey and contains a wealth of information tailored to the current topics in health news and media. Monthly, Radiant holds events ranging from raw cooking classes to educational lectures on health issues. A recent event accommodated approximately 125 guests to enjoy a raw food meal and a health related movie. Here guests could enjoy a home-cooked meal and get a chance to discuss concerns or questions with others to improve their lives.

"I am a mid-20's, 150lb male with a voracious appetite, focused on endurance sports as a hobby and exercise. I ate so much that shopping, preparing and eating food so dominated how I lived that at times I resented something that I loved so much. I believed I was a healthy person with a moderate background in natural health techniques, yet I was so susceptible to the common cold that I caught one approximately every two months, which became extremely frustrating. Every time I came in contact with a person coughing or flew in an airplane I was guaranteed to get sick even though my doctor told me I was in perfect health.
Stacey agreed to support me by helping me work on my immune system along with my immense gas problem. She devised a few methods to reduce my gas by modifying not only what I ate, but also how I ate. Although she is a classically trained chef who is also a certified Raw Food chef, she has never encouraged me to eat differently than I chose. The fact that she listened to MY goals and the path that I would rather take, she tailored MY treatment to work for ME. Too often do books, seminars and counselors subscribe a certain technique even though it doesn't match you. Stacey worked with me trying many different ways to reduce my gas by educating me in aspects of health I had never considered.
The final outcome of our time together has proven invaluable. I now have fewer mood swings, increased consistent energy, an enhanced sense of taste and appreciation for food, a greatly increased immune system, less gas, reduced weight and a happier lifestyle outside of food. Not only do I thank Stacey for everything she has done for me, but my co-workers, family and friends enjoy the new me as well."
